Terroir: Grapes are supplied by local growers who have a long term agreement with Laroche. All year through, the Laroche vineyard manager works in close relationship with them. According to the local tradition, grapes are crushed in the property of origin to ensure magior quality.
Vinification: Whole bunches are collected in a pneumatic press. Cold settling takes 12 hours at 12 to 15°C in wide tanks to accelerate the process naturally and produce very clear juice.
Fermentation at 16°C in stainless steel tanks for 15 days.
Ageing of 6 months on fine lees in stainless steel tanks.
Minimum filtration to preserve the natural character of the wine.
