KALTERN CABERNET SAUVIGNON RISERVA 'PFARRHOF'

Characteristic: Red wine, dry

Denomination: Alto Adige DOC

Grape: 95% Cabernet Sauvignon, 5% Merlot

Terroir: Gently sloping, south-east facing vineyard at 220 – 260 meters above sea level, very warm micro-climate, loamy, gravely weathered chalk.

Vinification: Fermentation in large wooden casks with extended maceration for 4 weeks, malo-lactic fermentation and 18 month ageing in barrique (50% new), light filtration and bottling.

Description: The ideal conditions for a well structured red wine are found at the small, 4.5 ha Pfarrhof. The mild, lake climate and the warm chalky gravel, as well as the densely planted vines and the low yields of 40 hl/ha form this special wine's foundation. Spontaneous fermentation with indigenous yeasts, a 20 month aging in wooden casks and bottling the wine unfiltered, make this wine into a true experience. The wine, with its intense, ruby-violet color, has a nose of blackberries, licorice, cinnamon and underbrush. On the palate, the wine is powerful with dense tannins and a long finish.

Food pairing: This wine should be partnered with red meats, game or piquant cheeses.
