Terroir: South- and east-facing slopes situated at an altitude between 230 and 350 meters above sea level. Loamy, chalky gravel with a low proportion of sand.
Vinification: Fermentation on the skins at 27 °C, with an extended maceration of ten days, malolactic fermentation followed by a 8-month ageing in barrique, big wooden barrels and large casks.
Description: This Cuvee of Cabernet Sauvignon and Merlot is aged for one year in wood, and then bottled. Cabernet belongs to the most full-bodied red wine varieties, has a garnet to dark garnet color, an earthy aroma, and slightly herbal flavor. The varietal Merlot originally comes from France, is a lighter, dry red wine of garnet to dark garnet color. Overtones of black currants, dried fruit, chocolate, green bell pepper, cedar and tobacco predominate in this cuvee.
Food pairing: This wine is ideal with red meats, game and piquant cheeses.
